When I was in school, I was never a fan of the food served in the cafeteria.

This is in no way a mark against the cafeteria staff, they were wonderful and always had a smile on their faces, it was simply the food. I was not a huge fan.

This led to me carrying a bag lunch most days, but I would look for things to carry that weren’t the same old boring items such as the prepackaged meals.

So, with school being back in full swing, I thought what better time to look back at my favorite lunch item I made, and still do make, honestly.

The dish in question is called homemade pizza pockets.

It is worth noting, however, that pizza is my chosen filling, but they can also be made with steak and cheese or ham and cheese for instance.

As always, the only limit is your imagination, I suppose.

Anyway, the idea spawned from an internet search at the beginning of the 2010s when I was entering high school.

The treats traveled well, as I could eat them at room temperature or even cold and they still held their flavor.

I often find myself making them as a meal on long road trips, in an effort to avoid spending money on fast food, because of their sustainability.

They are really quite simple to make too, as they only require store bought ingredients, there is no making anything from scratch.

All things considered, I think that makes for an excellent alternative to prepackaged meals that offer, most of the time, little to no nutritional value.

Ingredients 1 pack frozen roll dough 1 jar pizza sauce 1 pack pepperonis (or meat of choice) 1 pack shredded mozzarella (or cheese of choice) 3 tbsps grated Parmesan cheese 1 tsp garlic powder 1 tbsp Italian seasoning

■ Mix the Parmesan cheese, garlic powder and Italian seasoning and mix to create the topping seasoning and set to the side. ■ Place the frozen dough balls on a greased baking sheet and let thaw for about 1.5 hours. ■ Take thawed dough and roll flat on a floured surface. ■ Layer ingredients inside. Typically a teaspoon of sauce with a small amount of cheese and pepperoni. ■ Fold the dough over like an envelope and crimp shut with a fork dipped in flour. ■ Place back on a greased baking sheet. ■ Brush with egg wash and sprinkle with topping seasoning to taste. ■ Bake at 350 degrees Fahrenheit until golden brown. ■ Let rest on the baking sheet for approximately 5 minutes then serve warm with leftover pizza sauce.
